EZ Salsa Chicken

2-4 skinless and boneless chicken breasts
1 large jar of your favorite salsa

Directions:  Heat oven to 400 degrees.  Place chicken breasts in a large glass nonstick baking pan.  Pour entire jar of salsa over chicken.  Flip chicken and ensure the chicken is covered in salsa.  Place in oven and bake for 60 minutes.  Flip chicken every 20 minutes and scoop any salsa in bottom of the pan over the chicken.
This dish is excellent with black beans and sliced tomatoes or JK’s Pico on the side.

Serving size = 3 oz.

Creamy Chicken & Rice Bake

2 cans of Campbell’s Cream of Chicken Soup
3 skinless chicken breasts (4 oz breasts)
2 cans water
1 box wild rice

Directions: Mix rice, soup, and water together in bowl.  Spray non-stick cooking spray in a 9” x 13” pan.  Place chicken in the pan and pour rice mixture over the chicken.  Bake at 350o for two hours.  Flip chicken every 30 minutes.  After fully cooked take out and let cool for 10 minutes before serving.  Enjoy!

Serving size = 8 oz (1 chicken breast and ¾ cup of rice mixture)
