Eggs are one of the healthiest foods you can eat! They offer an excellent source of high-quality nutrients that many of us are deficient in – especially high-quality protein and fat.

Always choose the higher quality, free-range organic varieties. An egg is considered organic if the chicken was only fed organic food, which means it will not have accumulated high levels of pesticides from the grains (mostly genetically manufactured corn) which are typically fed to chickens, nor will they be produced by chickens given genetically modified hormones.

To receive the most health benefit from eggs, eating it raw or minimally cooking it (sunny side up or poached) is best. The reason for this is because cooking them will damage the valuable nutrients like lutein, zeaxanthin, and bioflavonoids present in the egg yolk; these nutrients are valuable for for your vision.
